These were amazing, and very easy to make. A single yam brought on a flavor profile that made this irresistible to finish.
Ingredients:
- 1 yam
- 4 potatoes (that you can grasp in your hand)
- 2 small garlic cloves
- 1/2 an onion (that you can grasp in your hand)
- 1/4 tsp salt
- 1/4 cup butter
- cheese (?)
Steps:
- Dice onion and garlic into small pieces. Place in a non-stick skillet, cover with water, and simmer until water is almost gone.
- Skin potatoes and send through a food processor with the string disk (or just cut in thin pieces.)
- Rinse potatoes in water several times and dry very well.
- Add butter to skillet and when melted add the potato mixture
- Stir and coat the potato well
- Cook for roughly 30 minutes (or until taste/texture is done), stirring occasionally, and making sure mixture is evenly spread across the skillet.
- (add shredded cheese of your choice if you wish)
- Serve hot and enjoy!
